Theme settings
Theme settings apply to the whole store at once. A color scheme set here is used by every section; a corner radius set here rounds every card on every page. Sections can override a few of these individually, but the defaults all come from here.
Open them from Theme editor → Theme settings (the gear icon at the bottom of the left sidebar).
Where to start
If you are setting up a new store, work through these first. They have the widest reach, and changing them later means re-checking every page.
Everything else can be adjusted as you go.

Changes apply everywhere
There is no preview limited to one page. When you change a theme setting, check a product page, a collection page and the home page before saving — those three between them use nearly every setting in this list.
